Marinated Mushrooms

Ingredients:
2 tablespoons vinegar (white or tarragon)
1 tsp Dijon style mustard
1/4 tsp dried or 1/2 tsp fresh tarragon leaves
4 scallions, sliced thin
1/2 pound small white button mushroom caps, washed and left whole
6 tablepoons light olive oil
salt and pepper
3 tablespoons fresh parsley, chopped fine
Directions:
Whisk together all marinade ingredients except scallions in a glass or stanless steel or other nonreactive bowl. Add scallions last, stirring gently. Add mushrooms, turn to coat and marinate in the refrigerator for 4 hours. They'll keep for up to a week. To serve, drain (reserve marinade to use as a salad dressing) and spear the mushrooms on individual toothpicks.
