Lemony White Bean Dip

White beans pureed with garlic and parsley and lemon juice.

Ingredients:
2 cloves garlic
2 (15 oz) cans white beans, rinsed and drained.
1 cup packed fresh parsley leaves
1/4 cup fresh lemon juice
1/4 cup olive oil
1/2 tsp. salt
Directions:
Place the garlic cloves in a food processor and pulse until finely chopped. Add the beans, parlsy, lemon juice and olive oil and process until smooth. Add the salt, adjusting to taste. Spoon into a serving bowl. Makes 2 cups.
Cook's Notes:
Make up a day in advance and chill. Serve this dip with red bell pepper strips, celery ribs and pita wedges. Like hummus only lighter, this dip also can be turned into a sandwich when spread on bread and topped with lettuce and lemon slices.
