Mom's biscuits

Light buttermilk biscuits

Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
5 tablespoons Crisco shortening

Directions:
Measure all ingredients together with Crisco shortening. Mix with fork until it resembles coarse oatmeal. Gradually pour buttermilk into dry ingredients, just until mixed (over mixing will make biscuits tough). Place mixture on floured surface and gently knead until dough is tacky. Pat out to about 1/2 inch thick and cut with biscuit cutter. Heat oven to 500 degrees. Put about 1 teaspoon of shortening in a round biscuit pan. Heat to just before oil starts to smoke. When you put biscuits in oil, it should sizzle. Turn over once and continue until all biscuits are placed in pan. Bake about 12 to 15 minutes or until golden brown. The bottoms come out nice and crispy and the tops are moist.
