Banana Bread

Bananas and pecans flavor this whole wheat bread

1 hour

Ingredients:
1 cup shortening
2 cups sugaqr
6 ripe bananas
4 eggs
2&1/4 cups whole wheat flour
1 teaspoon salt
2 teaspoons soda
1 teaspoon vanilla
1 cup chopped pecans, optional

Directions:
Cream shortening and sugar. Mash bananas and add to creamed mixture. Add eggs, one at a time, beating after each addition. Sift flour, salt and soda together and add to banana mixture. Add vanilla and pecans. Pour into 2 greased and floured 9X5X2 loaf pans and bake at 350 degrees for 45 minutes or until done.

Cook's Notes:
Makes great muffins also. Cut cooking time to 25-30 minutes
