Mardi Gras Crawfish Cornbread

Cornbread with crawfish, onions, cheese, corn and jalapenos.

Ingredients:
2 cups yellow cornmeal
1 teasp. baking powder
1 teasp. salt
1/4 teasp. creole or Cajun Seasoning
6 eggs
2/3 cup vegetable oil
1 yellow onion, finely diced
8 oz. cheddar cheese, grated
1 (12 oz) bag frozen corn, thawed
2 lb. crawfish tail meat, finely chopped
4 oz. chopped jalapenos
Directions:
Stir all dry ingredients together in a large mixing bowl.
Stir in eggs, oil and other ingredients one at a time. Pour into 9X13 pan and bake at 350 degrees for about 30 minutes or until golden brown.

I put mine in muffin tins.
