Peanut Brittle

Peanut brittle

Total Time:
1 hour

Ingredients:
1 cup sugar
1/2 cup light corn syrup
1&1/2 cups raw peanuts
1/8 tsp salt
1 tsp vanilla
1 tsp butter
1 tsp baking soda

Directions:
Cover cookie sheet with foil and spray lightly with non-stick cooking spray. In a large microwave safe bowl combine sugar, light corn syrup, peanuts and salt. Mix togehter. In microwave heat on high 8 minutes, stirring well halfway through. Stir in vanilla and butter. Microwave 2 minutes. Add baking soda and stir until the mixture is foamy and light. Don't overstir. Quickly pour onto baking sheet. Using metal knife, evenly spread 1/4 inch thick. Cool.
