Hill Country Cocoa Pecan Pie

Creamy pudding like pecan pie

Ingredients:
Pie Crust
1/2 pound (2 sticks) butter
5/8 cup granulated sugar
3/4 cup brown sugar, packed
1/2 cup honey
1/4 cup heavy cream
2/3 cup chopped bittersweet chocolage, such as El Rey
1 pound chopped pecans

Directions:
Cook the pie shell until 3/4 done.
Preheat oven to 350 F.

In a saucepan bring the butter, sugars and honey to a rapid boil. Lower the heat and simmer 3 minutes until the mixture bubbles.

Add cream, chocolate and pecans, and continue to cook and stir until mixture bubbles again. Pour the filling into the prepared pie crust and bake until bubbles appear, about 10 to 12 minutes. Remove from the oven and chill. Serve cold with coffe ice cream and garnish with a chocolate curl, if desired.
