Lemon Jello Cake

Lemon flavored cake made with cake mix.

Total Time:
1 hour

Ingredients:
1 package lemon cake mix
1 pkg. lemon jello (small)
4 eggs
3/4 c. water
2/3 cup oil, plus a little.
1 Tsp. lemon extract

Directions:
Heat water and melt the lemon jello.

After it cools a bit, combine all ingredients and beat with electric mixer for 4 minutes.

Pour into greased tube cake pan and bake 35 to 40 minutes at 350.

After removing cake from oven, but while it is still hot, prick all over top of the cake with a cake and frost with icing made with 2 cups powdered sugar and juice of 1 large lemon.

Cook's Notes:
If you use too much oil, the cake will fall. Use a little more than 2/3 cup but not as much as 3/4 cup
