Efurd Family Peach Cobbler

Peach Cobbler

Ingredients:
For the pie pastry:
1&1/2 cup flour
1 teaspoon salt
1/2 cup shortening
5 tablespoons cold water

For the filling:
4 cups peeled peaches (cut up)
2 cups sugar
2 tablespoons flour
1 stick butter, melted

Directions:
For the pastry, mix flour and salt together. Cut in shortening until resembles corn meal. Add cold water gradually until blended to pastry consistency. Roll out on lightly floured surface and cut into strips. For the filling, place the peaches in a two-quart baking dish. Mix sugar and flour together and sprinkle over peaches. Pour melted buter over. Strip the top of the peach mixture with pastry and cook in a preheated 400 degree oven until brown and bubbly.
