Chewy Oat-nut cookies

Oatmeal cookies with nuts, coconut and nuts.

Ingredients:
1&1/4 sticks of unsalted butter
1/3 cup sugar
1/3 cup brown sugar, packed
1 egg
1 teaspoon vanilla
3/4 cup whole wheat pastry flour or oat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1&1/2 cups oatmeal (not quick oats)
1/2 cup of pitted prunes, chopped inhto raisin-sized morsels
1/2 cup chopped walnuts or pecans
1/2 cup flaked unsweetened coconut

Directions:
Preheat oven to 375 degrees. Cream butter and sugars in a mixer. Add egg and vanilla. Add flour, baking soda and salt and mix witht he butter mixture just until combined. In a separate bowl, combine oatmeal, dates, walnuts and coconut. Stir together and add to dough. Spoon lsarge tablespoon portions onto baking sheet. Bake for 8 to 9 minutes. Allow to cool on baking sheets for 4 to 5 minutes after removing from oven.
