Granny's Chocolate Chip Cake
Submitted by Sue Lowes on Sep 20, 2010

From scratch cake with chocolate chips--no icing required.

Servings:
Group

Complexity:
Easy

Total Time:
1 hour

Ingredients:
2 sticks (1 cup) butter, softened
1&1/2 cups packed brown sugar (divided use)
1/2 cup granulated sugar
2 eggs, separated
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 (12 oz) package semisweet chicolate chips

Directions:
Preheat oven to 375 F.

Beat the butter, 1/2 cup of the brown sugar and the granulated sugar in a large bowl with a mixer on medium speed until creamy, about 3 minutes. Add the egg yolks; beat until light, about 2 minutes.

Blend in the flour, salt and baking powder until mixture comes together but is still crumbly.

Pat into an ungreased 9 X 13 inch baking pan. Top dough with chocolate chips, pressing them down into the dough; set aside.

Beat the egg whites in a medium bowl with a mixer on medium speed until stiff; add the remaining 1 cup of brown sugar. Beat until well combined; spread over chocolate chips.

Bake until a tester tests clean, about 25 minutes. Cool on wire rack before cutting into squares.
