Easy Apple Cake

Apples, walnuts, raisins and spices make up this delicious apple cake.

Ingredients:
2 eggs
1&1/2 cups sugar
1 teaspoon vanilla
1/2 cup safflower or canola oil
1/2 cup unbleached white flour
1&1/2 cup whole wheat flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup chopped raisins
4 cups finely chopped apples with skins

Directions:
Combine eggs, sugar, vanilla and oil in a large mixing bowl; beat until smooth. Combine flour with soda, cinnamon and salt, then add to moist ingredients and mix well. Fold in nuts, raisins and apples. Spoon into a greased 8 X 12 inch baking dish.

Bake in a preheated 350 degree oven for 50 to 60 minutes, or until cake feels firm to the touch.
