Pecan Pie Muffins

Taste the pecan pie in these muffins.

Ingredients:
1 cup packed brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup unsalted butter, melted
2 eggs, beaten
1/2 teaspoon vanilla
Directions:
Preheat oven to 350 degrees.
Grease and flour miniature muffin tins or regular size muffin tin. Combine brown sugar, flour and pecans. In separate bowl, mix butter, eggs and vanilla. Combine with flour mixture until just moistened. Fill muffin tins 3/4 full. Bake 15 minutes or until golden brown, Let sit in tins 5 minutes, then turn our carefully to wire rack to cool completely. Makes 32 miniature muffins or 12 regular-sized muffins.
