Texas Coconut Pound Cake

Moist Pound cake with shredded coconut

Total Time:
1 & 1/2 Hours

Ingredients:
2/3 Cup crisco
2 Sticks butter or margarine
3 Cups white sugar
3 cups all purpose flour
5 large eggs
1 cup whole milk
1/2 tsp baking powder
1&1/2 cup coconut, shredded
2 tsp. coconut extract

Directions:
Cream butter, Crisco and sugar. Add eggs one at a time beating well after each. Add coconut flavoring. Sift flour and baking powder. Alternate adding flour and milk to sugar mixture. Add coconut.

Spray tube pan with non stick spray. Bake 325 for 1 hour to 1 hour & 15 minutes. Cool in pan for 10 minutes turn on cooling rack.

Cook's Notes:
You can glaze with a mixture of powdered sugar, milk and small amount of coconut flavoring. Or simply sprinkle with powdered sugar.
