Pumpkin Spice Cookies with Cinnamon Chips

Spicy pumpkin cookies

Ingredients:
1/2 cup butter or margarine softened
2 eggs (mix calls for 1, I use 2)
1 pouch Krusteaz Pumpkin Spice Baking Mix
10 oz. Hershey's cinnamon chips

Directions:
1.Heat oven to 350 degrees. Lightly grease cookie sheet or spray with non-stick cooking spray.
2. Blend butter or margarine, egg and pouch of mix together in medium bowl until dough forms. Scoop dough by rounded teaspoons (for 3&1/2 dozen) or tablespoons (for 2 dozen) and place 2 inches apart onto prepared cookie sheet.
3. Bake 8 to 10 minutes or until light golden brown around edges. Cool cookies 5 minutes before removing from cookie sheet.

Cook's Notes:
You can purchase the mix (3 pouches) at Sam's. Cookies are also good made with 12 oz. of white chocolate chips.
