Pecan Pie Shortbread Cookies

Chewy vanilla cookies with pecan filling.

Ingredients:
For Cookies:
1 cup soft brown sugar, packed
3/4 cup unsalted butter, softened
1 egg
1 teaspoon vanilla extract
2 cups plain flour
1 teaspoon baking powder
For Pecan Filling:
1 cup pecans, chopped
1/2 cup soft brown sugar
1/4 cup whipping cream
1 teaspoon vanilla extract
Directions:
Preheat oven to 350 degrees. Line 2 baking trays with parchment paper and set aside. In a large mixing bowl, beat the brown sugar, butter, egg and vanilla extract together until creamy. Beat in the flour and baking powder until well mixed. Shape the dough into 1&1/4 inch balls. Place 2 inches apart onto baking trays. Make an indentation in each cookie with your thumb; rotate thumb to hollow out slightly. To prepare pecan filling: Mix all pecan filling ingredients in small bowl. Fill each cookie with 1 rounded teaspoon of filling. Bake for 8 to 12 minutes or until lightly browned. Cool for 1 minute before removing from cookie sheets. These cookies can be made ahead of time and frozen for up to 1 month.
