Pumpkin Cookies
Submitted by Sue Lowes on Dec 18, 2013

Chewy pumpkin cookies with spices and nuts or raisins.

Servings:
Group

Complexity:
Easy

Total Time:
2 hours

Ingredients:
1 box yellow cake mix
2 teaspoons pumpkin pie spice
1 cup canned pumpkin (not pumpkin pie mix)
1/4 cup softened butter
1/2 cup raisins or nuts (if desired)

Directions:
Heat oven to 375. Lightly grease or spray cookie sheet. (I use parchment paper)
In large bowl, beat cake mix, pumpkin pie spice, pumpkin and butter with electric mixer on low speed. Stir in raisins or nuts.
Drop dough onto cookie sheet 2 inches apart
Bake 15-18 minutes or until lightly golden brown around edges
Cool 1 to 2 minutes then remove from cookie sheet to cooling rack.

Cook's Notes:
You can use 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg and 1/2 teaspoon ground ginger instead of pumpkin pie spice.

If you wish, ice with vanilla frosting.

Makes 2 dozen cookies.

To double recipe use 1 can of pumpkin instead of 2 cups.

This is another 2013 Christmas Cookie Exchange cookie.
