Southern Plantation Cake

Dense, moist cake with nuts

Servings:

Easy

Total Time:
1&1/2 hours

Ingredients:
1 cup oil
1 yellow butter cake mix
1 cup sugar
4 eggs
1 cup sour cream
1&1/3 cups of coconut

Icing:
1 box powdered sugar
1 stick of butter
1 bar of cream cheese
1 tsp. vanilla
1 cup pecans or walnuts, chopped

Directions:
Mix the cake ingredients together and bake at 325 degrees for one hour

For icing, mix all ingredients together. If it is too think, add just a little milk until you get the consistency you want. Spread on cooled cake.

Cook's Notes:
I use large angel food cake pan. You can bake in two cake pans and reduce the baking time to 35 minutes

I said nothing about the ingredients when I served this, and the "coconut haters" didn't even notice.
