Soft Taco with Fresh Tomato Salsa

Ground walnut meat seasoned with Mexican spices, encased in a collard green wrap and served with Fresh Tomato Salsa.

Ingredients:
1 ½ cups raw walnuts, ground in food processor
1 ½ tsp ground cumin
¾ tsp ground coriander
2 T. Nama Shoyu (or soy sauce of choice)

3-4 small or medium collard green leaves (or other greens of choice)
1 cup shredded romaine lettuce

Fresh Tomato Salsa:
2 cups chopped tomatoes
¾ cup chopped fresh cilantro
½ cup chopped yellow onions or scallions
2 T. fresh lemon or lime juice
1 T. olive oil
4 cloves garlic, minced
Rounded ¼ tsp Cayenne pepper
¾ tsp sea salt
1 ½ tsp ground cumin
¾ tsp ground coriander

In a small mixing bowl, combine walnuts, cumin, and coriander, and mix well. Add the Nama Shoyu and mix well. Spread approximately 1/3 cup of walnut mixture along the center stem of the green leaf, add a layer of shredded lattice. Top with approximately 1/3 cup of the salsa before serving.
