Ole Pasta With Black Bean Sauce

Pasta with spice black bean sauce

Ingredients:
1 pound pasta (such as bow ties)
2 tablespoons olvie oil
2 cloves garlic, minced
1 (15 oz) can black beans, including liquid
1/2 cup Paces Picante sauce (hot)
4 plum tomatoes, chopped
Sour cream
4 green onions, sliced, for garnish

Directions:
Place water on to boil for pasta and cook according to package directions.

Meanwhile, heat olive oil in large skillet. Add garlic and saute for a few minutes. Process black beans with liquid in food processor until pureed. Add pureed beans and tomato salsa to skillet and heat, stirring, about 3 minutes.

Mix together bean mixture and drained pasta in large mixing bowl. Divide into 4 dishes. Garnish with tomatoes, dollops of sour cream and green onions.
