Joe's Special
Submitted by Sue Lowes on May 20, 2010

Ground meat with eggs, mushrooms and spinach.

Servings:
6

Complexity:
Easy

Total Time:
1 hour

Ingredients:
2 pounds ground sirloin
1 pound fresh mushrooms, sliced
Dozen eggs
1 bell pepper chopped
1 large onion chopped
2 boxes frozen chopped spinach (defrost and drain)

Directions:
Brown ground sirloin, onions and bell pepper in large skillet. Season with garlic, salt & pepper. Add spinach and cook for about 5 minutes until heated through, keeping the heat pretty high. Scramble eggs in bowl and pour into the skillet, stirring until cooked.

Cook's Notes:
This is one of Ted's recipes that he learned to make before we met. It is very popular in the Bay Area. Ted likes to cook his eggs separately and then combine them with the other ingredients.
Great served with Sour Dough bread or hot tortillas and Cheese.
