Fiesta Tamale Pie

Tamale pie with ground pork, onions, peppers and black beans.

Ingredients:
1/2 pound ground pork
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (15 oz) can black beans, rinsed & drained
1 cup Salsa
2 tablespoons chopped Jalapeno Peppers
1 (7.4 oz) Sweet cornbread mix
1 cup shredded sharp Cheddar cheese
Additional salsa, if desired
Sour cream, if desired

Directions:
Heat oven to 375 degrees. In large skillet, cook pork, onion and bell pepper until pork is no longer pink. Stir in beans, salsa and jalapeno peppers. In bowl, prepare corn bread mix according to package directions. Spoon corn bread mixture into greased 9-inch pie plate. Spoon pork mixture into crust. Bake 30 minutes or until set. Remove from oven; sprinkle with cheese. Bake 2 to 5 minutes longer or until the cheese is melted. Let stand 5 minutes. Cut into wedges. Serve with salsa and sour cream.

Cook's Notes:
I use ground turkey instead of pork sometimes.
