Baked chicken with apricot and white wine sauce.

Servings:
6

Complexity:
Easy

Total Time:
1&1/2 hour

Ingredients:
4 whole chicken breasts, boned
1 tsp ground ginger
1/2 tsp salt
2 eggs, well beaten
1/2 cup white wine
1 cup bread crumbs
1 tsp garlic powder
1/4 tsp white pepper
1 cup apricot preserves
2 tbsp. margarine or butter

Directions:
Preheat oven to 350 F. Cut chicken breasts in half. Rinse with cold water and dry well on paper towels.

Combine bread crumbs, ginger, garlic powder, salt and pepper in shallow dish.

Dip each chicken part in beaten egg. Then in crumb mixture. Arrange in a single layer in a baking pan.

Combine preserves, wine and margarine. Microwave on high setting for 5 minutes, or bring to a boil in a small saucepan. Pour over the chicken breasts and bake for 1 hour. Baste often.

Cook's Notes:
The greatest pleasure in life is doing what people say you cannot do.
