Pepperoni Casserole

Rice casserole with pepperoni, tomaroes and mushrooms topped with cheese.

Ingredients:
2-10 oz cans beef consume soup
1 cup raw white rice
2/3 cup chopped green pepper
2/3 cup chopped onion
Small can sliced or chopped mushrooms
8 oz sliced pepperoni
1 big can cooked tomatoes
16 oz shredded mozzarella cheese
Directions:
Add rice to consume, cover and simmer over low hear until liquid is absorbed.
Saute the green pepper, onion, mushrooms and sliced pepperoni.
Zap the tomatoes in a food processor and then add to sauteed mixture. Simmer rapidly about 20 minutes. Stir rice into this mixture.
Put 1/2 of total mixture in greased casserole dish, top with 8 oz shredded mozzarella cheese; put second 1/2 of the mixture on top of cheese; top with the remaining cheese.
Bake at 350 degrees for about 30 minutes.
