Baked Potato Omelet Casserole

Yummy breakfast dish to serve to a crowd. Has hashbrowns, sausage, cheese and eggs.

1 hour

Ingredients:
1 (20 oz) package frozen savory seasoned shredded has browns, thawed
1 (16 oz) package sausage, cooked, crumbled, and drained
10 slices bacon, cooked and crumbled
1 (8oz) package shredded mozzarella and cheddar cheese blend
10 large eggs
2 cups half and half
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves

Directions:
Preheat oven to 350 degrees. Lightly grease 13 X 9 X 2 inch pan.

Place hash browns in prepared dish, pressing gently.
Layer sausage, bacon and cheese on top.

In medium bowl, whisk together eggs and remaining ingredients. Pour over casserole. Bake 35-40 minutes or until lightly browned and set.

Cook's Notes:
This is great served with sour cream and salsa.
