King Ranch Chicken

Ingredients:
1 dozen corn tortillas
Chicken stock
1 large hen, stewed, boned, cut in bites
1 large green pepper, chopped
1 large onion, chopped
2-4 tablespoons cooking oil
1 pound cheddar cheese, grated
1 teaspoon chili powder
Garlic powder to taste
Salt to taste
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes with green chilies, crushed

Directions:
Soak tortillas in boiling chicken stock; place half in bottom of three-quart casserole.

Make 2 layers as follows:

Top with 1/2 chicken pieces. Saute green pepper and onion until tender and layer 1/2 over chicken. Add 1/2 grated cheese to casserole, sprinkle chili powder, garlic powder and salt; spoon on 1/2 diluted soups and 1/2 Rotel SauceRotel sauce.

Make another layer of same sprinkling top with a little of the cheese.

Bake at 375 degrees for 30 minutes.

Cook's Notes:
This can be prepared ahead of time, freeze, thaw and bake.
