Jacque's Meatloaf

Meatloaf recipe with Velveeta Cheese

Very Easy

Total Time:
1 hour

Ingredients:
1 pound extra lean ground beef
1 pound of the next lower grade of ground beef
1 large onion ch ipped fine
3 ribs of celery chopped fine
2 or 3 slices of day old bread chopped up
1/2 pound of Velveega cheese (cut into 1/2 inch pieces)
Seasoning to taste (salt, pepper and parsley)
1/2 tsp garlic powder
2 eggs
1/4 to 1/2 cup milk (depending on consistency)

Directions:
Mix all ingredients well and put in well greased loaf pan and cook until done at 350 degrees. About half way through, put a generous amount of catsup on the top of the loaf. Should take about 1 hour to cook but maybe not---check the middle for doneness.

Cook's Notes:
This also works really well cooking it in cupcake or muffin tins that have been well greased with Pam. They cook much faster than the loaf.
