Mexican Beef Casserold

Casserole with ground beef, onions, black beans, cheese and tomatoes.

Ingredients:
1 lb. extra lean ground beef
1 medium onion drained
1 can chopped tomatoes drained
1 can black beans rinsed & drained
1 pkg. taco seasoning mix
8 to 12 corn tortillas
3.4 cup sour cream
1/3 cup shredded Mexican mix cheese
sliced jalapenos
Directions:
Brown ground beef & onions for 10 to 12 minutes. Drain. Add corn, beans, tomatoes, taco seasoning. Mix and simmer for 5 minutes.
Spray baking dish (2qt.) with Pam and place 1/2 tortillas in bottom. Pour half the meat mixture over the tortillas and then put sour cream on top of that. Place the remaining tortillas on top and then the other half of the meat mixture. Bake for 25 minutes. Remove from oven, and spread cheese over the top with jalapenos on top of the cheese. Bake for 5 to 10 minutes longer until all the cheese is melted.
