Spinach & Mushroom Spaghetti

Spaghetti with Spinach and Mushrooms

Ingredients:
16 ounces spaghetti
1 tablespoon olive oil
1&1/2 large halved onions, thinly sliced
12 ounces sliced fresh mushrooms
2 cloves minced garlic
1 (8 to 10 oz) package fresh baby spinach leaves
1 cup diced tomatoes
Freshly grated parmesan cheese
Directions:
Cook pasta according to directions; reserve 1/4 cup cookin water and set aside. Strain pasta. Return pasta to pot.
Heat oil in a large nonstick skillet on medium-high. Add onions and mushrooms; cook 8 minutes or until onions are browned. Reduce heat to medium; add garlic and cook 30 seconds or until fragrant. Add spinach leaves in batches; cover adn cook until wilted. Stir reserved cooking water into spinach mixture; mix well. Add spinach mixture and tomatoes to pasta; toss to mix. Sprinkle with cheese and serve.
