Mexican casserole

Total Time:
1&1/2 hour

Ingredients:
1 dozen tamales
3 chicken breasts, poached boned and shredded
1 onion, chopped
1 cloge garlic, minced and pressed
1 green bell pepper, seeded and chopped
1 tablespoon olive oil
1 (15 oz) can tomato sauce
1 (4oz) can black olives, sliced
2 tablespoons ground chile or chile powder
1 (14&1/2 oz) can cream style corn
8ozs. grated cheddar cheese

Directions:
Oil 9X13 casserole dish. Line the bottom with tamales. Layer the chicken on top. Saute onion, garlic and bell pepper in olive oil. Add tomato sauce, olives, chile and corn. Blend well and pour over chicken. Sprinkle with cheddar cheese. Bake at 350 for 1 hour or until bubbly.

Cook's Notes:
A truly Tex-Mex concoction.
