Complexity:
Easy
Total Time:
1 hour
Ingredients:
1 can (6&1/2 oz) white albacore tuna
1/2 cup chopped celery
3/4 cups plumped raisins*
3/4 cups chopped pecans
1/2 can slided water chestnuts, chopped
1/2 medium apple, chopped
4-5 tablespoons mayo or salad dressing
Plumped Raisins
Take about 1 or 1/2 cups of raisins and put them in a sauce pan with 2 jiggers of sweet liquor - sherry, brandy, rum or 2-3 tablespoons sugar and enough water to cover raisins. Put on a very high heat and bring to a fierce boil for only a few seconds. Remove from heat, cover with tight lid and let the pan cool. You will have raisins that are plump and flavorful. May be used in any recipe that calls for raisins and cooked cereal.
Directions:
Mix all ingredients together and refrigerate for about an hour. Adjust mayo to desired consistency.
