Southern-Style Refrigerator Slaw

Slaw made with onions and V-8 juice.

Ingredients:
1 large head cabbage (about 5 pounds)
1 large yellow onion (1 cup chopped)
1 cup apple cider vinegar
1 cup sugar
1 (6oz) can low-sodium V-8 Juice
1 teaspoon salt
1 teaspoon celery seed

Directions:
Wash and remove outer leaves of cabbage. Cut into eights and remove core. Peel onion. Using food processor vitted witht he steel blade attachment, process cabbage and onion, in manageable batches, until finely chopped.

Scrape cabbage and onion into large container with a tight fitting lid. Set aside.

In a 1-quart saucepan, combine vinegar, sugar, V-8, salt and celery seed. Bring to a boil and stir until sugar is melted.

Pour hot mixture over cabbage and toss to coat well. Cover and refrigerate until completely chilled, at least 4 hours.

Cook's Notes:
Great for a picnic.
