Black Bean Salad

Black beans with olive oil dressing and a hint of live and cilantro.

Ingredients:
3 (15 oz) cans of black beans
1/2 cup olive oil
Juice of one lime
3 tablespoons red wine vinegar
4 clvoes garlic, minced or pressed
1/2 cup purple onoin, chopped
1/4 cup fresh cilantro, chopped fine
1 cup salsa
1/2 cup black olives, sliced or halved
2 cans whole kernel corn (optional)
Directions:
Drain black beans and rinse. Then mix all ingredients and allow to marinate in refrigerator 3 hours before serving.
