Indian Curry Couscous Salad

Spicy couscous salad

Very Easy

Total Time:
1 hour

Ingredients:
1 cup water
2/3 cup couscous
1/4 cup extra virgin olive oil
3 T lemon juice
1&1/3 cup frozen vegetables, thawed
2&1/2 T Spice Islands Calcutta Heat Curry Seasoning
1 can (15 oz) black beans, drained & rinsed

Directions:
Boil water in small saucepan. Remove from heat and add couscous. Cover and let sit 5 min. Remove cover and cool 10 min.

Combine oil, lemon juice and seasoning in small bowl, stir well and let stand 10 min. Combine vegetables, beans and couscous in large bowl; toss to combine. Pour dressing over salad; toss to coat. Cover, refrigerate 1 hour to blend flavors.
