Rice Pea Salad

Rice and pea salad with radishes and scallions.

8

Complexity:   
Very Easy

Total Time:
30 min.

Ingredients:
1&1/2 cup rice
1 tablespoon white wine vinegar
Salt, pepper
1 bunch radishes
1 bunch scallions
dill
1 pint fresh peas (or 1 package frozen, defrosted)

Directions:
Add rice to a large saucepan with vigorously boiling salted water. Boil about 15 minutes. Slice radishes, chop scallions. Drain rice, add vinegar, salt and pepper and toss. Add vegetables. Let cool to room temperature or refrigerate.

Cook's Notes:
