Best Salad Ever
Submitted by Sue Lowes on Jun 09, 2010

Salad made with Bibb or Romaine lettuce, avocadoes, cramberries, pecans and Parmesan cheese. For a crowd

Servings:
Group

Complexity:
Very Easy

Total Time:
1 hour

Ingredients:
2-3 heads Bibb or Romaine lettuce
3/4 cup grated Parmesan
6 ripe avocados, diced
Dried cranberries
Toasted pecans

For the dressing:
3/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoons dry mustard
1 teaspoon salt
1/2 handful sugar
12-15 cloves garlic

Directions:
Tear lettuce in mixing bowl. Toast pecans for 5-10 minutes at 350 degrees (watch carefully not to burn). Cool pecans. Meanwhile, in a blender mix all dressing ingredients. Add cranberries, pecans, diced avocados and cheese to lettuce. Pour dressing over salad just before serving

Cook's Notes:
Note: Dressing is best made a few days in advance so garlic will lose potency.
