Broccoli Salad

Very nice broccoli salad with dried cranberries, apricots and sharp cheddar, red onion, slivered almonds and sunflower seeds.

Total Time:
1 hour

Ingredients:
2 large bunches fresh broccoli
2 cups mayonnaise
1/2 cup sugar
1/2 cup red wine vinegar
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
2 (6oz) packages sweetened dried cranberries
1 (6oz) package dried apricots, diced
1 (8oz) block extra sh arp Cheddar cheese, shredded
2 (2.25 oz) packages slivered almonds, toasted
1 cup sunflower seeds
1 small purple onion, diced and sauteed.

Directions:
Cut flowerets from broccoli; chop and set aside. Cut broccoli stalks into one-inch pieces and pulse in food processor until finely chopped. Whisk mayonnaise and next foru ingredients in large bowl. Add broccoli, cramberries and remaining ingredients, tossing to coat.
