Minted Confetti Cole Slaw

Green and red cabbage slaw with onoins, carrots and mint, made with oil and vinegar dressing

Total Time:
1 hour

Ingredients:
4 cups thinly sliced green cabbage
3 cups th inly sliced red cabbage
2 cups grated carrots
1 cup thinly sliced green onions
1/2 cup chopped fresh mint
1/3 cup olive oil
1/3 cup champagne vinegar or white wine vinegar
1 tablespoon Dijon-style mustard
2 teaspoons sugar
1/4 teaspoon salt
1/2 teaspoon white pepper

Directions:
In a large bowl, combine vegetables and min.

In a separate bowl, whisk together remaining ingredients

Pour dressing over vegetables and toss until coated. Slaw can be served chilled or at room temperature.

Cook's Notes:
Makes twelve 3-oz servings.
