Broccoli, Orange and Roasted Pepper Salad

Vegetable and fruit salad with olive oil dressing.

Total Time:
30 minutes

Ingredients:
1 small bunch of broccoli (about 1 pound), cut in 2-inch florets
2 medium oranges
1/3 cup roasted red bell peppers from a jar, rinsed and cut in thin strips
2 tablespoons white wine vinegar
1 tablespoon olive oil
1/4 teaspoon cayenne pepper
1/4 teaspoon salt

Directions:
Steam the broccoli florets in a steamer basket over simmering water until just tender, about 7 minutes. Rinse with cold water and drain Set aside in a large bowl.

Slice off the tops and bottoms of each orange. Stand the oranges upright on a work surface. Using a small sharp knife, cut away the skin and white pith. Cut between the menbranes to release the sections and add them to the broccoli. Mix in the red bell pepper strips.

Just before serving, add the vinegar and oil and toss to combine season with the cayenne and salt.
