Fresh Pickled Cucumber Salad

Cucumbers, onions, bell pepper and spices in sweet vinegar.

2 hours

Ingredients:
7 cups unpeeled pickling cucumbers sliced very thin
1 cup sliced onions
1 cup sliced red bell peppers
1 tsp salt
1 cup white vinegar
2 cups sugar
1 tsp celery seed
1 tsp mustard seed

Directions:
Combine cucumbers, onions and bell peppers. Set aside

Mix vinegar, sugar, celery seed & mustard seed in saucepan and bring to a boil. Allow to cool.

Pour mixture over veggies and then put in jars and store in fridge up to 2 months.

Makes 2 quart jars.
