Salad and Lemon Vinaigrette

Salad with grilled portabella mushrooms and fresh goat cheese (so cheese melts)

Ingredients:
Mixed salad greens for 4
East Texas Tomatoes (2 medium)
Grilled portabella mushrooms (2)
Goat cheese crumbled (1/2 cup)
Toasted walnuts (1/2 cup)
Homemade Croutons (1 cup)
Directions:
I make the salad tossing the mixed greens with chopped tomatoes and top with warm grilled portabella mushrooms and fresh goat cheese. Throw in toasted walnuts and homemade croutons. Toss with the Lemon Vinaigrette and you've got salad! Bon Appetit!
