Fiesta Salad

Colorful Mexican salad

Servings:

Very Easy

Total Time:
30 minutes

Ingredients:
Juice of 1/2 lime
3 tablespoons olive oil
3 tablespoons red wine vinegar
3 cloves garlic, minced or pressed
1 teaspoon dried oregano
1 teaspoon Worcestershire sauce

2 tomatoes, chopped
1 small purple onion, chopped
2 cans whole kernel corn
1/4 cup fresh cilantro, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 zucchini, diced
1 or 2 Serrano peppers, seeded and minced (optional)

Directions:
Combine the first 6 ingredients to make a dressing.

Mix the dressing with the remaining ingredients blending well. Chill and serve.

Cook's Notes:
This salad makes the perfect side for any Tex-Mex meal. It's colorful and perfect for an outdoor buffet.
