Chile-Lime Pasta Salad

Pasta salad with cucumber, red onion, lime, chipotle chile and tossed with Italian dressing.

Ingredients:
8 oz. cavatappi or elbow twist pasta
3/4 cup bottled Italian vinaigrette dressing
1/4 cup lime juice
1/4 cup chopped fresh cilantro
1 Tbs. grated lime zest
1/2 tsp. ground cumin
1/4 tsp. ground chipotle chile pepper or chili powder
1 cucumber, halved lengthwise, cut crosswise into 1/4" thick slices
1 small red onion, chopped, 1 cup
1 cup roasted red peppers from a jar, 5oz., patted dry, cut into 1/4" wide strips
1 can (2.5oz) sliced black olives, drained
Directions:
Cook pasta according to package directions; drain. Rinse under cold water until cool.
In large serving bowl combine dressing, lime juice, cilantro zest, cumin and chile pepper. Stir in pasta, cucumber, onion and red peppers and olives. Refrigerate until ready to serve.
