Lime Jello Salsd
Submitted by Sue Lowes on Apr 08, 2010

Creamy cool lime salad

Servings:
8

Complexity:
Very Easy

Total Time:
20 minutes

Ingredients:
2 small packages lime gelatin (I use sugar free)
8 oz. cream cheese
1 large can crushed pineapple, drained
1 cup nuts (pecans are best)
2 cups hot water
1&1/2 cup cold water

Directions:
Dissolve gelatin in hot water. Add cold water and cream cheese then beat with blender. Add pineapple and nuts. Congeal overnight.

Cook's Notes:
May substitute drained pineapple juice for some of the cold water.

This has been around for a long time. I have seen it served with a thin layer of mayonnaise on top and then shredded cheddar cheese sprinkled on top of the mayonnaise.
