Scalloped Cabbage

Baked cabbage with bacon, cheese and sauce

Ingredients:
Med. head cabbage (chopped)
6 slices bacon
2 tb. green pepper
1/2 cup chopped onion
1 cup shredded cheddar
2 tb. chopped pimento
1/2 cup buttered bread crumbs

White sauce:
3 tb. melted butter
3 tb. flour
1&1/2 cup milk
3/4 tsp salt
dash pepper

Melt butter in sauce pan. Add flour and blend with butter. Pour in the milk and cook over medium heat until it thickens, stirring constantly. Add salt and pepper.

Directions:
Cook cabbage 10 min. in water and then drain. Fry bacon until crisp--drain and crumble. Saute onion and green pepper in drippings. Put 1/2 cabbage in 2&1/2 quart casserole dish--cover with 1/2 cheese, all bacon, onion and pepper and pimento. Top with the remainder of cabbage and cheese.

Pour sauce over top and spinkle with bread crumbs. Bake at 375 for 20 minutes.

Cook's Notes:
