Mushroom & Wild Rice Pilaf

Wild Rice Pilaf with mushrooms

Very Easy

Total Time:
1 hour

Ingredients:
2 tsp butter
1 medium shallot, peeled & finely chopped
1 cup choppe shitake, oyster or white mushrooms
1/3 cup wild rice
1 1-inch) piece fresh rosemary or 1/4 tsp dried
1 cup chicken broth
salt & freshly ground pepper

Directions:
Melt butter in small pan. Add shallot and mushrooms and saute over medium heat 5 minutes.

Add wild rice, rosemary and chicken broth. Bring to boil. Reduce heat to low. Cover and simmer until rice is tender and liquid absorbed, about 1 hour. If any liquid remains, remove cover, increase temperature to medium and cook off excess liquid. Season to taste.
