Wild Rice

Wild rice cooked with celery & onions

Servings:
4

Complexity:   
Very Easy

Total Time:
1 hour

Ingredients:
1/ cup minced celery
1 cup chopped onion
1 tablespoon butter
1 cup wild rice, rinsed
3 to 3&1/2 cups hot chicken broth
Salt and pepper to taste
1 tablespoon minced parsley

Directions:
Place celery, onions, butter and rice in medium saucepan over medium-high heat. Cook a few minutes to wilt the vegetables. Add 3 cups of hot broth and bring to a simmer. Cover and cook on very low heat for 40 to 45 minutes.

Check after 35 minutes and add additional broth if all the liquid has been absorbed.
