Rice with Sweet Red Peppers

Rice with red peppers, onions and spices.

Total Time:
30 minutes

Ingredients:
1 tablespoon butter
1 tablespoon olive oil
1/2 cup chopped onions
1 sweet red bell pepper, cored and chopped into 1/4 inch cubes
1/2 teaspoon ground cumin
1 cup converted or par-boiled rice
1&1/2 cups water or shrimp strock
Salt and freshly ground pepper to taste

Directions:
In a saucepan, melt the butter and add the olive oil. Add the onions and red pepper and cook, stirring until wilted. Add the cumin and the rice. Cook, stirring, over low heat until well blended. Add the water, and salt and pepper. Blend well.

Bring to a simmer, stirring. Cover tightly and cook over low heat for 17 minutes. Remove from the heat, toss gently with a fork. Keep warm and serve
