Spinach Artichoke Casserole

Canned artichoke hearts and frozen spinach with rice.

Ingredients:
2 tablespoons butter
1 (14 oz) can artichoke hearts, drained and quartered
1 (10 oz) package frozen chopped spinach thawed and drained
4 eggs beaten
1 cup plus 1 tablespoons milk
1/4 cup mayonnaise
1/3 cup lemon juice
1&1/2 cups uncooked quick-cooking rice
Directions:
Melt butter in a large skillet over medium-high heat. Add artichoke hearts and spinach; saute 1 to 2 minutes. Stir in eggs, milk, mayonnaise and lemon juice. Bring to a boil, stir in rice, cover and remove from heat. Let stand 10 minutes.
