Cowboy Beans

Delicious cold side made with your favorite beans. So feel free to substitute any beans you like.

Total Time:
30 minutes

Ingredients:
1 15 oz can pinto beans, rinsed
1 15 oz can black-eyed peas, rinsed or any beans of your choice
1 large stalk celery, chopped
1 medium onion, finely chopped
1 red bell pepper finely chopped
1 11 oz canned corn, drained
Dressing:
½ c. olive oil
½ c. canola oil
½ c. cider vinegar
½ c. sugar

Directions:
Combine all ingredients (beans, celery, onion, pepper and corn) and seal in container. In medium sauce pan bring oil, vinegar and sugar to boil. Cool. Add bean mixture and let marinate for 24 hrs. Stir occasionally
Serve with chips or eat as salad.

Cook's Notes:
Love this side dish year round but great in place of baked beans in the summer.
